20日は土用の丑（うし）の日。稚魚の深刻な不漁の影響で、例年以上にウナギが品薄になっている。

卸値の高騰を受けて、値上げに踏み切る料理店も多く「うな重」は気軽に口にできない食べ物になりつつある。それでも、あの甘辛いタレの味わいは捨てがたい──。

そんな声に応えようと、今年も工夫を凝らした代替品が登場した。

ウナギの卸値は昨年比で４割も高い。東京・日本橋の老舗「大江戸」のうな重「極上」は１人前９千円。昨年の7200円から1800円値上げした。

一番人気の「うな重」も3600円から４千円に。10年前の２倍の値段だという。

９代目店主の湧井恭行さんは「もっと値上げしないと採算が合わないが、お客が離れてしまう」と頭を抱える。
